Saskatoon Berry Cobbler

1/2 cup sugar
1/4 cup butter
1 Harvest Haven egg
1/2 cup milk
1 cup flour
2 tsp baking powder
1/4 tsp salt
1 tsp vanilla
2 cups fresh or frozen saskatoons
1/3 cup Harvest Haven honey
1 cup boiling water
1 Tbsp butter

Cream butter and sugar. Add egg and beat well. Stir in milk. Sift together flour, baking powder, and salt. Add to mixture and beat until smooth. Stir in vanilla.

Spread evenly over bottom of a greased 8-inch casserole dish.

Mix saskatoons, honey, boiling water, and butter. Pour over top of batter.

Bake at 350° F for 45 minutes or until done. The batter rises to the top during baking.

Serve warm, plain or with whipped cream.
