Roasted Red Pepper Dip
1 cup Red Peppers, roasted
1 clove Harvest Haven garlic
½ cup coconut milk
¼ cup cilantro, chopped
1 tsp ground cumin
2 tbsp lime or lemon juice
¼ tsp salt
¼ tsp pepper
Place peppers, coconut milk, cilantro, lime or lemon juice, cumin, garlic, salt, and pepper in a food processor. Pulse until very smooth.
Chill for at least 1 hour before serving. Adjust seasoning to taste.
Serve with Que Pasa Organic Ancient Grain Chips.
