Marinated Three-Bean Salad
Combine:
2 c Harvest Haven green beans, cooked till tender crisp
2 c Harvest Haven yellow beans, cooked till tender crisp
2 c Eden kidney beans
2 c Eden garbanzo beans
1/2 c red pepper, chopped
1/2 c Harvest Haven celery, sliced
Harvest Haven parsley, chopped
Mix and pour over vegetables (you may need to double this mixture):
1/4 c wine vinegar
2 Tbsp olive oil
1 tsp salt
1/2 tsp sugar
1/4 tsp pepper
1/8 tsp dry mustard
Chill salad overnight. Before serving, toss to coat beans with marinade.
