Unheated (unpasteurized) honey is an excellent source of vitamins, minerals, enzymes, antibiotics, bioflavonoids and organic acids. Heating (pasteurizing) the honey to high temperatures causes the destruction of these vital elements that are responsible for honey's ability to heal wounds, kill infections, and soothe internal organs.
Most honey sold on the market is pasteurized, or heated to some extent, diminishing the manifold health benefits of this wonder food. Also, most commercial honey (95%, approximately) comes from bee colonies treated with antibiotics.
