Dairy products – to eat or not to eat? While some say we need a certain number of glasses of milk per day, others say milk is only for calves, and still others that milk is medicine.
The problem is not milk, but rather the processing that makes it unfit for consumption. This life-giving wonder food has been stripped of its nutrition and health benefits by pasteurization and homogenization.
Most milk is processed at very high temperatures (ultra-pasteurization or UHT). Temperatures as high as 140° C (284°F) destroy essential vitamins and enzymes, and denature the milk proteins. This leads to lactose intolerance and other problems digesting dairy products.
Homogenization is even worse. Reducing the size of fat globules in the milk prevents cream from separating, but it also allows the enzyme xanthine oxidase to pass directly into the bloodstream where it attacks the artery walls and heart muscle. This causes lesions that the body tries to heal with a protective layer of cholesterol resulting in scar tissue, calcified plaques, and a build-up of fatty deposits.
What about the cows? In a conventional dairy herd, cows are kept in unhealthy conditions, fed chemicalled feeds, given hormones to over-produce, and antibiotics because they live in such stressful circumstances. There is evidence that dairy products from commercial operations do contain antibiotics which have been given to the cows.
